1 pound large shrimp, peeled and deveined

1 cup unsweetened shredded coconut

1/2 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon lime juice

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. In a bowl, whisk together the lime juice, garlic powder, paprika, salt, and black pepper. Toss the shrimp in this mixture and let them marinate for about 15 minutes.

    Set Up the Breading Station: In three separate bowls, prepare your breading station. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, combine the shredded coconut and panko breadcrumbs.

      Bread the Shrimp: Take each marinated shrimp and dip it into the flour, ensuring it’s fully coated. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, press the shrimp into the coconut-panko mixture, covering it completely. Place the breaded shrimp on a plate and repeat until all shrimp are coated.

        Air Fry the Shrimp: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Carefully place the breaded shrimp in a single layer in the basket (you may need to do this in batches). Lightly spray the tops of the shrimp with cooking spray for extra crispiness.

          Cook the Shrimp: Air fry the shrimp for 8-10 minutes, flipping halfway through, until they are golden brown and cooked through. The shrimp should reach an internal temperature of 120°F (49°C).

            Serve: Once cooked, remove the shrimp from the air fryer and serve immediately with a side of sweet chili sauce or a fresh lime wedge for dipping.
