1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup brown sugar or coconut sugar

1/2 cup unsweetened applesauce

1/2 cup milk (dairy or plant-based)

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 teaspoon vanilla extract

1 large apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

For the Maple Drizzle:

1/2 cup powdered sugar

2 tablespoons maple syrup

1–2 tablespoons milk (adjust for desired consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, flour, baking powder, baking soda, salt, cinnamon, and brown sugar. Whisk together until well mixed.

      Combine Wet Ingredients: In a separate bowl, mix the applesauce, milk, oil, egg, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to overmix, as this can make the muffins tough.

          Add Apples: Gently fold in the diced apple until evenly distributed within the batter.
