4 medium-sized ripe peaches, sliced

1 cup shredded mozzarella cheese

1 cup crumbled goat cheese

6 large whole wheat tortillas

2 tablespoons honey

1 tablespoon fresh mint, chopped

1 teaspoon cinnamon

2 tablespoons olive oil

Pinch of salt

Optional: Greek yogurt for dipping

Prepare the Peaches: In a medium bowl, combine the sliced peaches, honey, chopped mint, and a pinch of salt. Toss gently to coat and allow to sit for about 5 minutes to meld the flavors.

    Mix the Cheeses: In another bowl, mix together the shredded mozzarella and crumbled goat cheese. This will create a creamy and tangy filling for your quesadillas.

      Assemble the Quesadillas: Heat a large non-stick skillet over medium heat. Lay a tortilla on the skillet, and sprinkle half of it with a generous amount of the cheese mixture. Top the cheese with a layer of the peach mixture and then fold the tortilla in half.

        Cook: Cook for about 2-3 minutes on one side or until golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.
