Baked Chocolate Chip Oatmeal Squares

2 cups rolled oats

1 cup milk (dairy or non-dairy)

1 ripe banana, mashed

1/2 cup creamy almond butter (or any nut butter of your choice)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (dark or semi-sweet)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Set aside.

      Mix Wet Ingredients: In another bowl, mix together the mashed banana, almond butter, honey (or maple syrup), milk, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredient mixture into the dry ingredients bowl. Stir until everything is evenly mixed. Fold in the chocolate chips (and optional nuts) gently.

          Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly with a spatula.

            Bake: Place in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
