1 lb boneless, skinless chicken breasts, diced

2 bell peppers (red and yellow), sliced

1 medium onion, sliced

2 cups cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup shredded cheddar cheese

Fresh cilantro, for garnish (optional)

Lime wedges, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and onion, and sauté for about 5-7 minutes, until softened. Stir frequently to avoid burning.

      Cook the Chicken: Add the diced chicken to the skillet with the vegetables. Season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and fully cooked through, about 7-10 minutes.

        Prepare the Casserole Mixture: In a large mixing bowl, combine the cooked rice, black beans, diced tomatoes (with their juices), corn, and the chicken-vegetable mixture. Stir well to combine all ingredients.

          Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Spread it evenly across the dish, then sprinkle shredded cheddar cheese on top.
