Ingredients

4 ripe peaches, halved and pitted

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup rolled oats

1/4 cup chopped pecans or walnuts

1 tablespoon unsalted butter, melted

1 teaspoon vanilla extract

Pinch of salt

Vanilla ice cream or Greek yogurt for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Peaches: Slice the peaches in half and carefully remove the pits. Place the peach halves cut-side up in a baking dish.

Make the Topping: In a medium bowl, combine the brown sugar, ground cinnamon, nutmeg, rolled oats, chopped nuts, melted butter, vanilla extract, and a pinch of salt. Mix well until the ingredients are well incorporated.

Fill the Peaches: Spoon the oat mixture generously into the center of each peach half, pressing down lightly to ensure the filling adheres and stays in place.

Bake the Peaches: Pour a small amount of water into the bottom of the baking dish (about 1/4 cup) to help steam the peaches. Cover the dish with aluminum foil and bake for 20 minutes.

Uncover and Continue Baking: After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the peaches are tender and the topping is golden brown.

Serve: Allow the baked peaches to cool slightly before serving. They can be enjoyed warm with a scoop of vanilla ice cream or a dollop of Greek yogurt.

Garnish (Optional): Drizzle with honey or sprinkle with additional cinnamon for added flavor if desired.
