3 cups cooked rice (preferably day-old or leftover)

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, bell peppers)

2 large eggs, beaten

1/4 cup balsamic vinaigrette

1 tablespoon soy sauce

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Fresh basil leaves (for garnish, optional)

Instructions
 

Prepare the Base: In a large skillet or wok, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for about 3-4 minutes until the onions are translucent and fragrant.

    Add Vegetables: Stir in the mixed vegetables and cook for an additional 2-3 minutes until they are heated through. If using fresh vegetables, ensure they are tender yet crisp.

      Cook the Eggs: Push the vegetable mixture to one side of the pan. Pour the beaten eggs into the cleared side and scramble them until fully cooked. Once done, mix the eggs into the vegetable mixture.

        Add Rice: Add the cold, cooked rice to the pan. Break apart any clumps with a spatula and stir-fry everything together for about 5 minutes, allowing the rice to get heated through and slightly crispy.
