Ingredients

2 cans young green jackfruit in water (about 20 oz each), drained and rinsed

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

8 slider buns (mini hamburger buns)

½ cup coleslaw (optional, for topping)

Pickles (optional, for topping)

Instructions

Prepare the Jackfruit: Start by shredding the jackfruit. Remove the core and seeds, then use your hands or a fork to pull the jackfruit apart into stringy pieces, similar to pulled pork. Set aside.

Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook for another minute until fragrant.

Add the Spices: Sprinkle in the smoked paprika, ground cumin, chili powder, salt, and pepper. Stir well to combine and cook for another minute to toast the spices.

Combine Jackfruit with Sauce: Add the shredded jackfruit to the skillet. Pour in the barbecue sauce and mix everything until the jackfruit is well coated. Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until it is heated through and the flavors meld.

Prepare the Buns: While the jackfruit is cooking, you can toast the slider buns lightly on a separate skillet or in the oven, if desired.

Assemble the Sliders: Once the jackfruit mixture is ready, spoon a generous portion onto the bottom half of each slider bun. Top with a few spoonfuls of coleslaw and pickles (if using), then place the top half of the bun on each slider.

Serve: Arrange the sliders on a platter and serve warm. Enjoy!
