1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Zest and juice of 1 lemon

Marinate the Beef: In a bowl, combine the balsamic vinegar, honey, soy sauce, minced garlic, rosemary, salt, pepper, lemon zest, and lemon juice. Add the beef, ensuring it is well-coated in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for optimal flavor.

    Prepare the Blueberry Glaze: In a medium saucepan, combine the fresh blueberries, 1 tablespoon of the marinade, and a splash of water. Cook over medium heat for about 10 minutes, stirring occasionally. The blueberries should break down and create a sauce. Once thickened, blend the mixture until smooth with an immersion blender or a regular blender; return to the heat and simmer for another 5-7 minutes. Adjust sweetness with more honey if desired.
