4 boneless, skinless chicken breasts

1 cup fresh blueberries (plus extra for garnish)

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley or thyme for garnish

Marinate the Chicken: In a bowl, mix balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, and pepper. Add chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes in the refrigerator (up to 2 hours for deeper flavor).

    Prepare the Blueberry Glaze: In a small saucepan over medium heat, combine the fresh blueberries and the remaining marinade. Cook for about 5-7 minutes until the blueberries start to break down. Use a fork or potato masher to gently crush some of the blueberries for a thicker glaze. Allow it to reduce until slightly thickened, about 5-10 more minutes. Remove from heat and set aside.

      Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Remove chicken from the marinade, allowing excess marinade to drip off. Grill or cook each chicken breast for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

        Glaze the Chicken: In the last few minutes of cooking, brush the blueberry glaze generously over the chicken breasts. Allow the glaze to caramelize slightly on the grill or skillet for about 2 minutes on each side.
