2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, diced

2 cups fresh broccoli florets

1 bell pepper, sliced (any color)

1 medium onion, diced

3 cloves garlic, minced

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

1 tablespoon cornstarch (optional, for thicker sauce)

Salt and pepper to taste

Sesame seeds, for garnish

Green onions, sliced (for garnish)

Instructions
 

Prepare Chicken Marinade: In a bowl, combine diced chicken, soy sauce, sesame oil, honey, minced garlic, and grated ginger. Let it marinate for at least 30 minutes for infused flavors.

    Cook Broccoli: In a large pot, bring water to boil. Once boiling, add the broccoli florets and blanch for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

      Stir-fry Chicken: In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add the marinated chicken, and cook until browned and cooked through, about 5-7 minutes. If the sauce is too watery, sprinkle cornstarch and mix well to thicken.

        Add Vegetables: Once the chicken is fully cooked, add the diced onion and sliced bell pepper to the skillet. Cook for another 3-4 minutes until the vegetables are slightly softened.

          Combine Ingredients: Gently fold in the blanched broccoli with the chicken and vegetables in the skillet. Stir well to mix all the flavors, seasoning with salt and pepper to your liking.

            Assemble Bowls: In serving bowls, add a bed of jasmine rice. Top each bowl with the broccoli chicken mixture.
