4 large ears of corn (shucked)

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1 tablespoon butter, melted

Fresh lime wedges (for serving)

Chopped fresh cilantro (for garnish)

Additional Cajun seasoning (for sprinkling)

Instructions
 

Prep the Corn: Begin by cutting each ear of corn into “ribs.” Stand an ear of corn upright on a cutting board and, using a sharp knife, carefully cut down along the sides of the cob, removing 4 or 5 long strips per ear. Repeat for all corn ears.

    Make the Marinade: In a bowl, combine the olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt. Stir until well blended.

      Coat the Corn: Toss the corn ribs in the marinade until evenly coated. Allow them to sit for about 15-20 minutes to let the flavors penetrate.

        Preheat the Grill: Heat your grill to medium-high. You can use either a gas or charcoal grill. For best results, make sure the grill grates are clean and lightly oiled to prevent sticking.
