4 boneless, skinless chicken breasts

8 oz fresh mozzarella cheese, sliced

2 large tomatoes, sliced

1 cup fresh basil leaves

1/4 cup balsamic vinegar

2 tablespoons honey

3 tablespoons olive oil

2 cloves garlic, minced

Salt and freshly cracked black pepper, to taste

1 teaspoon dried Italian herbs (optional)

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, black pepper, and Italian herbs (if using).

      Sear the Chicken: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. When the oil is hot, add the chicken breasts and sear for about 4-5 minutes on each side, until golden brown. Remove from heat.

        Layer the Toppings: On each chicken breast, layer slices of fresh mozzarella cheese, followed by slices of fresh tomato, and then some basil leaves.

          Make the Balsamic Drizzle: In a small saucepan, combine the balsamic vinegar and honey over medium heat. Allow it to simmer for about 5-7 minutes, until it thickens slightly. Remove from heat and set aside.

            Bake the Chicken: Transfer the skillet with the layered chicken into the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Garnish and Serve: Once cooked, remove the chicken from the oven. Drizzle the balsamic reduction over the chicken and garnish with additional fresh basil leaves. Serve hot with a side salad or roasted vegetables.
