Charcuterie Board Chicken Skillet

1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1 cup sliced salami

1 cup cubed Gruyère cheese

1/2 cup sliced olives (mixed green and black)

1/2 cup cherry tomatoes, halved

1/2 cup pickles, sliced

1 cup fresh arugula or mixed greens

1/4 cup balsamic glaze

Fresh herbs (parsley or basil), for garnish

Instructions
 

Prepare the Chicken: Begin by patting the chicken thighs dry with paper towels. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mix evenly over both sides of the chicken.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken thighs to the skillet. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Build Your Skillet: In the same skillet, add the sliced salami and cook for 2-3 minutes until slightly crispy. Next, add the cherry tomatoes and olives, sautéing them for another 2 minutes until warm.

        Combine Ingredients: Return the sliced chicken to the skillet, add the cubed Gruyère cheese on top, and cover the skillet. Allow the cheese to melt for 2-3 minutes over low heat.

          Serve: Once the cheese is melted, carefully remove the skillet from heat. Put a bed of arugula or mixed greens on a large serving platter, and transfer the contents of the skillet on top. Arrange the sliced pickles around the dish and drizzle balsamic glaze over everything.
