1 cup shredded sharp Cheddar cheese

3/4 cup whole milk

For the Chili:

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon olive oil

For Assembly:

1/4 cup sliced jalapeños (optional, for extra heat)

Fresh cilantro or parsley for garnish

Instructions

Make the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, whisk together the flour, baking powder, salt, and garlic powder.

        - Add the cubed butter and mix using a pastry cutter or fork until the mixture resembles coarse crumbs.

          - Stir in the shredded Cheddar cheese.

            - Pour in the milk gradually, mixing until just combined. Do not overmix.

              - Turn the dough onto a floured surface and gently pat it to about 1-inch thickness.

                - Cut out biscuits using a round cutter or the rim of a glass and place them on a baking sheet lined with parchment paper.

                  - Bake for 12-15 minutes, or until golden brown. Set aside to cool slightly.

                    Prepare the Chili:

                      - In a large skillet, heat the olive oil over medium heat.

                        - Add the diced onion and sauté until translucent, about 5 minutes.

                          - Stir in minced garlic and cook for an additional 1 minute until fragrant.

                            - Add the ground beef (or turkey), breaking it up with a spoon, and cook until browned, about 7-10 minutes.

                              - Drain excess fat if needed, then stir in the kidney beans, diced tomatoes, chili powder, cumin, smoked paprika, salt, and black pepper.

                                - Simmer the chili for 15-20 minutes on low heat, stirring occasionally. Adjust seasoning to taste.

                                  Assemble the Sliders:

                                    - Slice the baked biscuits in half horizontally.

                                      - On the bottom half of each biscuit, spoon a generous amount of the chili.

                                        - Top with sliced jalapeños, if using, and cover with the top half of the biscuit.

                                          - Optionally, garnish with fresh cilantro or parsley before serving.

                                            Serve:

                                              - Serve warm as delicious sliders! You can offer hot sauce on the side for an extra kick.
