Cheesy Spinach Artichoke Tortilla Melt

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 clove garlic, minced

1 teaspoon lemon juice

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium mixing bowl, combine the softened cream cheese, chopped spinach, chopped artichoke hearts, minced garlic, lemon juice, red pepper flakes, mozzarella cheese, and Parmesan cheese. Mix until well combined. Season with salt and pepper to taste.

    Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.

      Place one tortilla in the skillet. Spread a generous amount of the cheesy spinach artichoke filling evenly over half of the tortilla.

        Fold the tortilla over the filling to create a half-moon shape.

          Cook for about 4-5 minutes, or until the bottom is golden brown and crispy. Carefully flip the tortilla and cook for another 4-5 minutes until the other side is golden and the cheese is melted.

            Remove the tortilla from the skillet and let it cool for a minute before slicing into wedges. Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

              Serve warm, garnished with chopped fresh parsley, and enjoy your cheesy delight!
