2 large eggs

1 cup fresh spinach, finely chopped (or 1/2 cup frozen spinach, thawed and squeezed dry)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/4 cup finely chopped onion (optional)

2 tablespoons olive oil (for cooking)

1/4 teaspoon black pepper

Pinch of red pepper flakes (optional for heat)

Prepare Spinach: If using fresh spinach, wash and chop it finely. If using frozen spinach, be sure to squeeze out any excess moisture after thawing.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and red pepper flakes if using.

      Whisk Wet Ingredients: In another bowl, combine the buttermilk, eggs, and chopped spinach. Mix until well combined.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix. Gently fold in the shredded cheese and chopped onion if using.
