Ingredients

4 large flour tortillas

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 tablespoon olive oil

1/4 cup diced sun-dried tomatoes (optional)

Fresh cilantro or parsley for garnish

Instructions

Prepare the Spinach Filling: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook for 2-3 minutes until wilted. Season with salt, black pepper, and red pepper flakes (if using). Remove from heat and let cool slightly.

Mix the Cheesy Mixture: In a mixing bowl, combine the cream cheese, sour cream, spinach mixture, mozzarella cheese, cheddar cheese, and diced sun-dried tomatoes (if using). Stir until well combined and creamy.

Assemble the Tortillas: Lay a tortilla flat on a clean surface. Scoop about 1/4 of the cheesy spinach mixture onto one side of the tortilla. Fold the other side over to create a half-moon shape, ensuring the filling is enclosed. Press down gently to seal.

Cook the Melts: Heat a non-stick skillet or griddle over medium heat. Place the folded tortilla onto the skillet and cook for about 3-4 minutes on each side or until golden brown and crispy, and the cheese is melted. Repeat the process with the remaining tortillas.

Serve: Once cooked, remove from the skillet and let cool for a minute. Slice each tortilla melt into wedges and garnish with fresh cilantro or parsley. Serve warm with salsa or guacamole on the side.
