Chicken Lettuce Wraps with Watermelon Glaze

1 lb ground chicken

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 small carrot, grated

1 bell pepper (red or yellow), finely diced

1/4 cup soy sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

8-10 large lettuce leaves (butter or romaine)

For the Watermelon Glaze:

2 cups fresh watermelon, cubed

1 tablespoon honey or agave syrup (optional, adjust to sweetness)

1 tablespoon lime juice

1 teaspoon cornstarch mixed with 1 tablespoon cold water

A pinch of salt

Instructions
 

Prepare the Watermelon Glaze:

    - In a blender, combine the watermelon cubes, honey (if using), and lime juice. Blend until smooth.

      - Pour the mixture into a saucepan and heat over medium heat.

        - Allow the glaze to come to a gentle simmer.

          - Stir in the cornstarch slurry (cornstarch mixed with water) to thicken the glaze, and continue cooking for about 3-4 minutes until it becomes slightly sticky and glossy.

            - Season with a pinch of salt, then remove from heat and set aside.

              Cook the Chicken Filling:

                - In a large skillet, heat the olive oil over medium-high heat.

                  - Add minced garlic and chopped onion, sautéing until the onion is translucent.

                    - Add the ground chicken to the skillet, breaking it apart with a spatula as it cooks. Cook until the chicken is browned and cooked through, about 5-7 minutes.

                      - Stir in the grated carrot, diced bell pepper, soy sauce, hoisin sauce, sesame oil, red pepper flakes (if using), salt, and pepper. Cook for another 2-3 minutes until the vegetables are tender and everything is warmed through.

                        Assemble the Lettuce Wraps:

                          - To assemble the wraps, take a large lettuce leaf and spoon in a generous amount of the chicken filling.

                            - Drizzle some of the watermelon glaze over the top of the filling for added sweetness and flavor.
