Chicken Lettuce Wraps with Watermelon Glaze

1 lb ground chicken

2 cups diced watermelon, seedless

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1 small red bell pepper, finely chopped

2 green onions, chopped

1/4 cup chopped cilantro

1 head of butter or iceberg lettuce (for wrapping)

Salt and pepper to taste

Optional: crushed peanuts for garnish

Prepare the Watermelon Glaze: In a blender, puree the diced watermelon until smooth. Strain the puree through a fine mesh sieve to remove excess pulp. You should have about 1 cup of watermelon juice.

    Make the Glaze: In a small saucepan over medium heat, combine the watermelon juice, soy sauce, hoisin sauce, rice vinegar, and sesame oil. Simmer until the mixture reduces to a syrupy consistency (about 5-7 minutes), stirring occasionally. Set aside.

      Cook the Chicken: In a large skillet over medium-high heat, add the ground chicken. Cook, breaking it apart with a spatula, until it starts to brown (about 5 minutes).

        Add Aromatics: Add the minced ginger and garlic to the chicken. Sauté for an additional 2-3 minutes until fragrant.

          Mix in Vegetables: Stir in the chopped red bell pepper and cook for another 3 minutes. Season with salt and pepper to taste.

            Combine with Glaze: Remove the skillet from heat and pour half of the watermelon glaze over the chicken mixture. Stir until well combined. Save the other half of the glaze for drizzling.

              Prepare Lettuce Wraps: Carefully separate leaves from the head of lettuce, ensuring they stay whole for wrapping.

                Assemble the Wraps: Spoon a generous amount of the chicken mixture into each lettuce leaf. Top with chopped green onions and cilantro. Drizzle with the remaining watermelon glaze.

                  Garnish: If desired, sprinkle crushed peanuts over the wraps for an extra crunch.
