4 boneless, skinless chicken breasts

1 cup green olives, pitted and finely chopped

1/2 cup black olives, pitted and finely chopped

2 tablespoons capers, rinsed and drained

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tablespoon lemon juice

1 teaspoon fresh thyme leaves

3 tablespoons olive oil, divided

Salt and pepper to taste

Lemon wedges for serving

Prepare the Tapenade: In a mixing bowl, combine the green olives, black olives, capers, garlic, parsley, lemon juice, thyme, and 2 tablespoons of olive oil. Mix well until the ingredients are combined. Season with salt and pepper to taste. Set aside to let the flavors meld.

    Prep the Chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.

      Sear the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 75°C). Remove the chicken from the skillet and set it aside to rest.

        Combine and Serve: In the same skillet, reduce the heat to medium-low. Add the prepared olive tapenade to the skillet, stirring to warm it through for about 2-3 minutes.

          Plate the Dish: Slice the chicken breasts and arrangement on individual plates. Spoon a generous amount of the warm olive tapenade over the chicken.
