Chili Cheese Monkey Bread Bites

2 cans (16 oz each) refrigerated biscuit dough

1 cup shredded sharp cheddar cheese

1 cup cooked ground beef (or turkey, for a lighter option)

1 cup chili (canned or homemade)

1/2 cup diced onions

1/2 cup diced bell peppers

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon cumin

1/4 cup melted butter

1/4 cup chopped fresh cilantro (for garnish)

Optional: sour cream or guacamole (for serving)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or butter.

      Prepare the Filling:

        In a medium bowl, mix the cooked ground beef (or turkey), chili, diced onions, diced bell peppers, garlic powder, chili powder, and cumin until well combined.

          Prepare the Biscuit Dough:

            Open the cans of refrigerated biscuit dough and separate each biscuit. Flatten each biscuit slightly with your hands.

              Assemble the Bites:

                Place about a tablespoon of the chili mixture onto the center of each flattened biscuit. Add a sprinkle of shredded cheddar cheese on top of the chili mixture.

                  Form the Balls:

                    Carefully fold the edges of the biscuit dough over the filling, enclosing it completely to form a ball. Pinch the seams to seal well.

                      Coat the Balls:

                        Dip each ball into melted butter, then roll them in a little more shredded cheese, if desired, for an extra cheesy crust.

                          Arrange in Muffin Tin:

                            Place each dough ball seam-side down in the greased muffin tin, spacing them evenly.

                              Bake:

                                Bake in the preheated oven for 18-20 minutes or until the dough is golden brown and cooked through.

                                  Garnish and Serve:

                                    Remove from the oven and let the monkey bread bites cool for a few minutes. Carefully remove them from the muffin tin, garnish with chopped fresh cilantro, and serve warm with optional sour cream or guacamole on the side.
