Chili Lime Chicken Kebabs

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons olive oil

Juice and zest of 2 limes

3 tablespoons honey

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine olive oil, lime juice, lime zest, honey, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Whisk until well blended. Add the cubed chicken thighs, mix well to ensure all pieces are coated, and cover the bowl. Refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Vegetables: While the chicken marinates, chop the red and yellow bell peppers and red onion into 1-inch pieces. Set them aside to prepare for skewering.

      Assemble the Kebabs: In a skewer, alternate threading the marinated chicken, red bell pepper, yellow bell pepper, and red onion. Repeat until all ingredients are used, leaving a little space between each piece for even cooking.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking.

          Grill the Kebabs: Place the assembled kebabs on the hot grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C) and the vegetables are tender and slightly charred.

            Serve: Remove the kebabs from the grill and let them rest for a few minutes. Garnish with freshly chopped cilantro and serve with lime wedges on the side for drizzling over the kebabs.
