1 cup orzo pasta

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, torn

1/2 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional)

Zest of 1 lemon

1 tablespoon lemon juice

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.

    Drain and Rinse: Once cooked, drain the orzo in a colander and rinse under cool running water to stop the cooking process. Allow it to drain completely.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, lemon zest, lemon juice, salt, pepper, and crushed red pepper flakes (if using).

        Combine Ingredients: In a large mixing bowl, combine the cooled orzo, cherry tomatoes, mozzarella balls, and torn basil leaves.

          Dress the Salad: Pour the dressing over the orzo mixture and toss gently until everything is evenly coated.

            Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or until thoroughly chilled.
