4 ripe peaches, diced (reserve a few slices for garnish)

1 tablespoon honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or vanilla-flavored)

1 cup whipped cream (or coconut whipped cream for a dairy-free option)

1 teaspoon cinnamon

1 cup granola (your favorite variety)

Fresh mint leaves for garnish

Prepare the Peaches: In a bowl, combine the diced peaches with honey (or maple syrup) and vanilla extract. Toss gently to coat the peaches. Set aside to let the flavors meld for about 10 minutes.
