Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or any nut butter of choice)

1/3 cup honey or maple syrup

1/2 cup unsweetened shredded coconut

1/4 cup ground flaxseed

1/2 cup dark chocolate chips (vegan if desired)

1/2 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup chopped nuts (almonds, walnuts, or pecans)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, ground flaxseed, dark chocolate chips, and a pinch of salt. If you're adding chopped nuts, include them in this step as well.

    Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and well blended.

      Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir with a spatula or wooden spoon until everything is evenly coated and well combined. The mixture may be sticky; that's normal!

        Form Pucks: With damp hands, take a small amount of the mixture and form it into puck-shaped disks, about 1 inch in thickness. Place them on a parchment-lined baking sheet or plate.

          Chill: Refrigerate the energy pucks for at least 30 minutes to set. This helps them hold their shape better.

            Serve & Store: Once set, you can enjoy them right away! Store any leftovers in an airtight container in the fridge for up to two weeks or freeze for longer storage.
