1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 cucumber, diced

¼ cup fresh cilantro or parsley, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon ground cumin

Salt and pepper to taste

Optional: feta cheese crumbles for topping

Instructions
 

In a large mixing bowl, combine the drained chickpeas, diced avocado, halved cherry tomatoes, chopped red onion, diced cucumber, and chopped cilantro or parsley.

    In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and pepper until well combined.
