8 oz whole grain spaghetti or rice noodles

1 cup creamy peanut butter

2 tablespoons soy sauce (low sodium)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 red bell pepper, thinly sliced

1 cup shredded carrots

1 cup cucumber, julienned

1 cup edamame, shelled (fresh or frozen)

4 green onions, chopped

¼ cup chopped cilantro

1 tablespoon sesame seeds (for garnish)

Cook the Noodles: Begin by boiling a large pot of salted water. Add the whole grain spaghetti or rice noodles and cook according to the package instructions until al dente. Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

    Prepare the Peanut Sauce: In a mixing bowl, combine the creamy peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Whisk together until smooth and well blended. If the sauce is too thick, gradually add a tablespoon or two of warm water until you reach your desired consistency.
