Cold Spinach Artichoke Salad

4 cups fresh baby spinach, washed and dried

1 can (14 oz) artichoke hearts, drained and chopped

1 cup cherry tomatoes, halved

1/2 cup red onion, finely diced

1/2 cup cucumber, diced

1/2 cup feta cheese, crumbled

1/4 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons lemon juice

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined. Set aside.

    Combine the Salad Ingredients: In a large mixing bowl, add the fresh baby spinach, chopped artichoke hearts, cherry tomatoes, red onion, cucumber, feta cheese, black olives, and parsley.

      Dress the Salad: Pour the prepared dressing over the salad mixture. Gently toss the salad with your hands or a large serving spoon to ensure all ingredients are well-coated with the dressing.
