1 cup uncooked long-grain white rice

2 cups vegetable broth (or chicken broth for non-vegetarian)

2 cups fresh broccoli florets

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream (or coconut milk for a dairy-free option)

1 cup shredded cheddar cheese (or vegan cheese)

1 tablespoon olive oil

1 teaspoon paprika

Salt and pepper to taste

Optional: crushed red pepper flakes for added heat

Optional: fresh parsley for garnish

Cook the Rice: In a medium pot, combine the uncooked rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and continue to sauté for another minute until fragrant.

      Add Broccoli: Stir in the fresh broccoli florets and cook for about 5 minutes, stirring occasionally, until they are bright green and slightly tender.

        Combine Ingredients: Lower the heat and add the cooked rice to the skillet with the broccoli mixture. Pour in the heavy cream and stir well to combine. Cook for another 2-3 minutes until the mixture is heated through.

          Add Cheese and Season: Sprinkle in the shredded cheddar cheese and paprika. Stir until the cheese is melted and creamy. Season with salt and pepper to taste. For a kick, add crushed red pepper flakes if desired.
