Creamy Buffalo Chicken Stuffed Pasta Shells

12 large pasta shells

1 cup cooked chicken, shredded

1/2 cup buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup shredded mozzarella cheese

1/4 cup blue cheese crumbles (or more for topping)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup green onions, chopped (for garnish)

1 cup marinara sauce (for the bottom of the baking dish)

Extra buffalo sauce (optional, for drizzling on top)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of boiling salted water, cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, sour cream, mozzarella cheese, blue cheese, garlic powder, onion powder, and salt and pepper. Mix until all ingredients are well incorporated and creamy.

        Stuff the Shells: Take each pasta shell and carefully stuff it with the buffalo chicken mixture, about 1-2 tablespoons each depending on the size of the shell. Repeat until all shells are filled.

          Assemble in Baking Dish: In a 9x13-inch baking dish, spread half of the marinara sauce evenly across the bottom. Arrange the stuffed shells seam-side up on top of the sauce. Pour the remaining marinara sauce over the shells.

            Add Cheese and Bake: Sprinkle any remaining mozzarella cheese and additional blue cheese crumbles over the top. Cover the dish with aluminum foil (to prevent sticking, spray the foil with cooking spray if necessary) and bake in the preheated oven for 20 minutes.

              Uncover and Broil: After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden. For an extra touch, you can place the dish under the broiler for a couple of minutes until the cheese is nicely browned.

                Garnish and Serve: Remove from the oven, and let it cool for a few minutes. Drizzle with extra buffalo sauce if desired, and garnish with chopped green onions before serving.
