Creamy Cajun Chicken & Corn Skillet

1 pound boneless, skinless chicken breasts, sliced into strips

1 tablespoon Cajun seasoning

2 tablespoons olive oil, divided

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon smoked paprika

1/2 cup heavy cream

1/2 cup chicken broth

1 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a mixing bowl, combine the sliced chicken strips with Cajun seasoning, salt, and pepper. Make sure each piece is well-coated.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips to the skillet and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and bell pepper for about 3-4 minutes until they start to soften. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Add Corn and Seasonings: Stir in the corn kernels and smoked paprika. Cook for another 2-3 minutes to combine the flavors.

          Create the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and let it thicken for about 3-5 minutes.

            Combine and Cheese It Up: Return the cooked chicken to the skillet, stirring to coat it in the creamy mixture. Gradually add the shredded cheddar cheese, stirring until melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.

              Serve: Remove from heat and garnish with freshly chopped parsley. Serve hot over rice, pasta, or with crusty bread.
