Creamy Chicken Alfredo Tortellini

12 oz cheese tortellini (fresh or frozen)

1 lb boneless, skinless chicken breasts, diced

2 cups heavy cream

1 cup grated Parmesan cheese

2 tbsp unsalted butter

3 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

2 cups fresh spinach (optional)

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced chicken to the pan, seasoning with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Alfredo Sauce: In the same skillet, add the remaining tablespoon of butter and sauté the minced garlic for about 1 minute until fragrant. Be careful not to burn it! Pour in the heavy cream, stirring well. Allow it to simmer for 2-3 minutes until it begins to thicken.

        Add Cheese and Combine: Gradually whisk in the grated Parmesan cheese, stirring until melted and smooth. If using, add the fresh spinach and cook until wilted. Season the sauce with additional salt and pepper to taste.

          Combine Chicken and Tortellini: Add the cooked chicken and drained tortellini into the skillet. Gently toss everything together until well coated in the creamy Alfredo sauce.

            Serve: Remove from heat and garnish with fresh parsley. Serve immediately, enjoying the creamy goodness!
