Creamy Garlic Spinach Penne

12 oz penne pasta

2 tablespoons olive oil

6 cloves garlic, minced

7 oz fresh spinach (baby spinach preferred)

1 cup heavy cream

3/4 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 tablespoon fresh lemon juice

Fresh basil leaves for garnish

Extra Parmesan for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Spinach: Gradually add the fresh spinach to the skillet, stirring until wilted, which should take about 2-3 minutes. Season with salt, black pepper, and red pepper flakes if using.

        Create the Cream Sauce: Lower the heat and pour the heavy cream into the skillet with the sautéed garlic and spinach. Stir continuously and let it simmer for about 3-4 minutes until it thickens slightly.
