300g spaghetti or your favorite pasta

200g ricotta cheese

Zest and juice of 1 large lemon

2 tablespoons olive oil

2 garlic cloves, minced

1 cup cherry tomatoes, halved

1/2 cup freshly grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Toasted pine nuts, for garnish (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
