12 ounces fettuccine pasta

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

16 ounces cremini mushrooms, sliced

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute, being careful not to burn it.

      Cook the Mushrooms: Add the sliced cremini mushrooms to the skillet. Sauté for 6-8 minutes until the mushrooms are golden brown and have released their moisture. Stir in the dried thyme and red pepper flakes (if using), and season with salt and black pepper.

        Make the Alfredo Sauce: Lower the heat, pour in the heavy cream, and bring to a gentle simmer. Gradually whisk in the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water, a little at a time, until you reach desired consistency.
