Creamy Mushroom and Swiss Burger Bowl

Ingredients
  

1 pound ground beef (or ground turkey)

1 cup Swiss cheese, grated

1 cup mushrooms, sliced (preferably cremini or shiitake)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon olive oil

Salt and pepper, to taste

1 cup cooked quinoa or brown rice

2 cups spinach (fresh or baby)

1/2 cup heavy cream

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Quinoa/Rice: Begin by cooking your quinoa or brown rice according to package instructions. This will be your base for the burger bowl.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sliced mushrooms. Sauté for about 4-5 minutes until the onions are translucent and the mushrooms are golden brown. Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Beef: Push the mushroom mixture to one side of the skillet and add the ground beef to the other side. Break it up with a spatula and cook until browned, around 6-8 minutes. Make sure to stir occasionally.

        Add Flavorings: Once the beef is cooked through, drain excess fat if necessary. Add Worcestershire sauce, salt, and pepper to taste. Mix well with the mushroom and onion mixture.

          Create the Creamy Sauce: Reduce the heat to low. Pour in the heavy cream and stir until combined. Allow it to simmer for about 3-4 minutes, then stir in the Dijon mustard and half of the grated Swiss cheese until melted and creamy.

            Prepare the Spinach: Just before serving, add the fresh spinach to the skillet. Stir until just wilted, about 1-2 minutes.

              Assemble the Bowls: In each serving bowl, place a generous scoop of the cooked quinoa or brown rice at the bottom. Top with the creamy mushroom and beef mixture.
