4 cups pumpkin puree (fresh or canned)

4 cups vegetable or chicken broth

1 cup coconut milk (or heavy cream)

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Pumpkin seeds for garnish (optional)

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
