Creamy Roasted Pepper & Chicken Shells

12 large pasta shells

2 cups cooked chicken, shredded (can use rotisserie chicken)

1 cup roasted red peppers, chopped (jarred or homemade)

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, roasted red peppers, ricotta cheese, cream cheese, half of the mozzarella cheese, garlic, olive oil, oregano, basil, salt, and pepper. Mix until well combined and creamy.

        Stuff the Shells: Carefully take each pasta shell and stuff it with the creamy chicken and pepper filling. Place the filled shells in a greased baking dish.

          Make the Sauce: In a small bowl, mix together the remaining mozzarella cheese and Parmesan cheese. Sprinkle this mixture evenly over the stuffed shells.
