Creamy Spinach Artichoke Pasta Bake

8 oz penne pasta

1 can (14 oz) artichoke hearts, drained and chopped

2 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

½ tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C).

      Cook the Pasta:

        In a large pot of boiling salted water, cook the penne pasta until al dente according to package instructions. Drain and set aside.

          Sauté the Spinach:

            In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.

              Prepare the Creamy Mixture:

                In a large mixing bowl, combine the ricotta cheese, cream cheese, half of the Parmesan cheese, and half of the mozzarella cheese. Add the sautéed spinach and garlic mixture, artichoke hearts, onion powder, garlic powder, red pepper flakes (if using), salt, and pepper. Mix until well combined.

                  Combine Pasta and Creamy Mixture:

                    Toss the cooked pasta into the creamy spinach-artichoke mixture, ensuring that every piece of pasta is coated with the creamy goodness.

                      Assemble in Baking Dish:

                        Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread it out evenly. Sprinkle the remaining mozzarella and Parmesan cheeses on top.
