12 oz (340g) pasta (penne or fettuccine)

2 tablespoons olive oil

1 lb (450g) chicken breast, diced

4 cloves garlic, minced

1 cup sun-dried tomatoes, chopped (in oil for extra flavor)

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: Red pepper flakes, for a bit of heat

Cook the Pasta: Begin by boiling water in a large pot. Add a generous amount of salt, then cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining, then set the pasta aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken breast. Season with salt and pepper and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.

      Prepare the Sauce: In the same skillet, add a little more olive oil if needed, then add the minced garlic and cook for about 1 minute until fragrant. Stir in the sun-dried tomatoes and cook for another 2 minutes.

        Create the Creamy Mixture: Lower the heat, then pour in the heavy cream and Italian seasoning. Stir to combine, allowing the mixture to simmer for about 2-3 minutes. If the sauce is too thick, you can add some reserved pasta water to reach your desired consistency.

          Combine Chicken and Pasta: Return the cooked chicken to the skillet, and add the drained pasta. Mix everything gently, ensuring the pasta is well-coated in the creamy sauce.

            Add Cheese: Stir in the grated Parmesan cheese until melted and evenly distributed. Taste and adjust with more salt, pepper, or red pepper flakes if desired.

              Serve: Once everything is heated through, remove from heat and serve immediately. Garnish with fresh basil leaves and a sprinkle of extra Parmesan if you like.
