1 cup orzo pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 ounces) diced tomatoes, with juices

2 cups chicken broth

1 cup heavy cream

1 teaspoon dried basil

1 cup fresh basil leaves, chopped

Salt and pepper to taste

½ cup grated Parmesan cheese

Optional: Fresh basil leaves for garnish

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add chopped onions and sauté for 3-4 minutes until they become translucent. Add minced garlic and cook for an additional minute until fragrant.

        Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the chicken broth. Bring the mixture to a boil.

          Make it Creamy: Reduce the heat to low and stir in the heavy cream, dried basil, and freshly chopped basil. Let the mixture simmer for 5 minutes to allow the flavors to meld.

            Combine Everything: Add the cooked chicken back into the skillet along with the drained orzo. Stir to combine everything well, and let it simmer for another 2-3 minutes. If the sauce is too thick, you can add a bit more chicken broth to reach your desired consistency.
