2 medium zucchinis, sliced into half-moons

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves, rinsed and drained

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken pieces, seasoned with salt and pepper. Sear for about 5-7 minutes, or until golden and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Then add the sliced zucchini and cherry tomatoes. Sauté for about 4-5 minutes until the zucchini is tender.
