4 medium-sized Yukon Gold potatoes

4 tablespoons extra virgin olive oil

6 cloves of garlic, minced

1 teaspoon sea salt

1 teaspoon freshly cracked black pepper

1 teaspoon paprika

1 teaspoon dried thyme or rosemary (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature will ensure they become crispy.

    Prepare the Potatoes: Wash and peel the Yukon Gold potatoes. Using a sharp knife or a mandoline slicer, slice the potatoes into thin rounds, about 1/8 inch thick. Place the slices in a bowl of cold water for about 10 minutes to remove excess starch, helping them crisp up better.

      Make the Garlic Oil: In a small bowl, combine the extra virgin olive oil, minced garlic, sea salt, black pepper, paprika, and dried herbs (if using). Mix well until the ingredients are combined.
