Crispy Parmesan Potato Rounds

4 medium-sized russet potatoes

1 cup grated Parmesan cheese

1 cup breadcrumbs (Panko preferred for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

¼ cup fresh parsley, chopped (optional, for garnish)

3 tablespoons olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Slice them into ¼-inch thick rounds. You can leave the skin on for extra texture and flavor.

      Parboil the Potato Rounds: In a large pot, bring salted water to a boil. Add the potato rounds and cook for about 5-7 minutes until they are just tender but still maintain their shape (they should not be fully cooked). Drain the potatoes and let them cool slightly.

        Mix the Coating: In a large bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well to ensure an even distribution of spices.

          Coat the Potato Rounds: Drizzle the olive oil over the parboiled potato rounds and toss them gently to coat. This will help the coating stick. Take each potato round and dip it into the breadcrumb mixture, pressing gently to adhere the coating well on both sides.

            Arrange on Baking Sheet: Place the coated potato rounds in a single layer on the prepared baking sheet, leaving space between each round for even cooking.

              Bake Until Crispy: Bake in the preheated oven for about 20-25 minutes, flipping the potato rounds halfway through. They should be golden brown and crispy.
