Ingredients

2 large sweet potatoes

2 tablespoons cornstarch

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: 1/4 teaspoon cayenne pepper for heat

Optional garnishes: fresh herbs (like parsley or cilantro), sea salt, or your favorite dipping sauce

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Using a waffle fry cutter, cut the sweet potatoes into waffle fry shapes. If you don't have a waffle cutter, you can use a regular knife to cut them into thin strips, though the texture may not be the same.

Soak the Fries: Place the cut sweet potato fries in a large bowl and cover them with cold water. Let them soak for at least 30 minutes. This step helps to remove excess starch and results in crispier fries.

Drain and Dry: After soaking, drain the fries and lay them out on a clean kitchen towel or paper towels. Pat them dry thoroughly. Removing as much moisture as possible will aid in achieving crispiness.

Season the Fries: In a large bowl, combine the dried sweet potato fries with cornstarch, olive oil, garlic powder, paprika, salt, black pepper, and cayenne pepper (if using). Toss well to ensure all of the fries are evenly coated.

Bake the Fries: Spread the seasoned fries in a single layer on the prepared baking sheet. Avoid overcrowding – use two baking sheets if necessary to ensure they bake properly.

Crisp It Up: Bake in the preheated oven for about 25-30 minutes, flipping the fries halfway through. They should be golden brown and crispy. Keep an eye on them near the end to prevent burning.

Cool and Garnish: Once baked, remove the fries from the oven and let them cool for a few minutes. If desired, sprinkle with fresh herbs, a pinch of sea salt, or serve with your favorite dipping sauce.

Enjoy: Serve your crispy sweet potato waffle fries hot as a snack or side dish. Enjoy the deliciousness!
