Crunchy Air-Fried Avocado Tacos

2 ripe avocados, halved and pitted

1 cup panko breadcrumbs

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

6 small corn tortillas

1 cup shredded red cabbage

½ cup diced tomatoes

¼ cup chopped cilantro

1 lime, cut into wedges

½ cup sour cream or Greek yogurt (optional for serving)

Instructions
 

Prepare the Avocado:

    Scoop the flesh from the avocado halves while ensuring they remain intact. Slice the avocado halves into thick wedges.

      Season and Coat the Breadcrumbs:

        In a bowl, mix the panko breadcrumbs, olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss the avocado wedges gently in the spice mixture until well coated.

          Air-Fry the Avocado:

            Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray. Place coated avocado wedges in a single layer in the basket (you may need to do this in batches). Air fry the avocados for about 8-10 minutes, or until golden and crispy, flipping halfway through.

              Warm the Tortillas:

                While the avocados are frying, warm the corn tortillas. You can do this by lightly toasting them in a skillet over medium heat for about 30 seconds on each side until they're pliable and have a little warmth.

                  Assemble the Tacos:

                    Once the avocados are done, assemble your tacos by placing a few avocado wedges on each tortilla. Top with shredded red cabbage, diced tomatoes, and finish with chopped cilantro.

                      Serve:
