There’s something utterly satisfying about a fresh, crunchy veggie wrap. Growing up, my weekends were often filled with vibrant trips to the farmer's market with my family. We would wander through the stalls, picking up the freshest produce, soaking in the colors and aromas that surrounded us. Among the many delights, I was always drawn to the colorful displays of bell peppers, zucchini, and other vegetables. It was during these formative years that I developed a passion for wrapping up those fresh flavors into a handheld meal. Fast forward to today, and I continue to embrace those wholesome ingredients, but with a modern twist: air frying.

Crunchy Air-Fried Veggie Wraps

Try this simple recipe for a healthy, delicious meal that’s sure to please everyone.

Ingredients
  

4 large whole grain or spinach tortillas

1 cup shredded carrots

1 cup bell peppers (mixed colors), sliced thinly

1 cup zucchini, julienned

1 cup red cabbage, shredded

1 cup canned black beans, rinsed and drained

1/2 cup corn kernels (fresh or frozen)

1 tsp cumin

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1/2 cup Greek yogurt or plant-based yogurt (for serving)

Fresh lime juice (for serving)

Olive oil spray

Instructions
 

Prepare the Veggies: In a large mixing bowl, combine shredded carrots, sliced bell peppers, julienned zucchini, shredded red cabbage, black beans, and corn. Toss well to mix.

    Season the Mixture: Add cumin, smoked paprika, garlic powder, onion powder, salt, and pepper to the vegetable mixture. Stir until all ingredients are evenly coated with the spices.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous portion of the veggie mixture onto the center of the tortilla. Fold the sides in and then roll from the bottom up, securing as tightly as possible. Repeat with the remaining tortillas and filling.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Prepare the Wraps for Air Frying: Lightly spray the outside of each wrap with olive oil to help them crisp up while air frying.

            Air Fry the Wraps: Place the wraps in a single layer in the air fryer basket (you may need to do this in batches). Air fry for about 10-12 minutes, flipping halfway through, until they are golden and crispy.

              Serve: Once the wraps are cooked, remove them from the air fryer and let cool slightly. Serve warm with a dollop of Greek yogurt and a squeeze of fresh lime juice on top.
