Crunchy Baked Falafel Balls

1 cup dried chickpeas (soaked in water for 8 hours)

1 small onion, roughly chopped

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

Salt and pepper to taste

1/4 cup tahini

3 tablespoons olive oil (plus more for drizzling)

1/2 cup breadcrumbs (preferably whole grain for extra crunch)

Optional: 1 teaspoon paprika or cayenne pepper for added heat

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: Drain and rinse the soaked chickpeas. Add them to a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, pepper, and tahini. Blend until you achieve a coarse mixture.

      Form the Mixture: Transfer the chickpea mix to a bowl. Fold in the breadcrumbs and olive oil until well combined. If desired, sprinkle in the paprika or cayenne for a bit of heat. The mixture should be firm enough to shape; if it's too wet, add a bit more breadcrumbs.

        Shape the Balls: Use your hands to form small balls, approximately the size of a golf ball, and place them on the prepared baking sheet. Leave space between each ball to ensure even cooking.

          Coat and Bake: Lightly drizzle olive oil over the falafel balls to help achieve that crispy texture. Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until golden brown and crunchy on the outside.

            Serve: Remove from the oven and let cool slightly before serving. These falafel balls pair wonderfully with tahini sauce, hummus, or a fresh salad. Enjoy!
