Easy Cheesy Baked Gnocchi

1 lb (450g) potato gnocchi

2 cups marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large pot, bring salted water to a boil. Cook the potato gnocchi according to package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.

      In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

        Stir in the chopped spinach and sauté until wilted, about 2-3 minutes. Season with salt, pepper, and dried Italian herbs.

          In a large mixing bowl, combine the cooked gnocchi, sautéed spinach, marinara sauce, and ricotta cheese. Mix gently until well coated.

            Transfer the gnocchi mixture into a greased 9x13 inch (23x33 cm) baking dish.

              Sprinkle the shredded mozzarella and grated Parmesan evenly on top.

                Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbly.

                  Once out of the oven, let it cool for a few minutes. Garnish with fresh basil leaves before serving.
