Ingredients

1 sheet of puff pastry (thawed if frozen)

2 medium ripe tomatoes, sliced

1 cup fresh mozzarella cheese, sliced

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon dried oregano (or fresh if available)

Salt and pepper to taste

Fresh basil leaves, for garnish

1 egg (beaten for egg wash)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry into a rectangle or circle about 1/8 inch thick. Transfer the pastry to a baking sheet lined with parchment paper.

Create a Border: With a sharp knife, gently score a 1-inch border around the edges of the pastry, being careful not to cut all the way through. This will allow the edges to rise and create a lovely crust.

Prick the Base: Use a fork to poke holes in the center of the pastry, preventing it from puffing up too much during baking.

Season the Tomatoes: In a bowl, toss the sliced tomatoes with the olive oil, balsamic vinegar, dried oregano, salt, and pepper.

Layer the Tart: Arrange a layer of sliced mozzarella cheese evenly over the pastry, followed by the seasoned tomato slices. You can layer them in an overlapping manner for a beautiful presentation.

Brush the Edges: Using a pastry brush, apply the beaten egg around the edges of the tart to create a golden, glossy finish.

Bake: Place the tart in the preheated oven and bake for about 20-25 minutes or until the pastry is puffed and golden brown, and the cheese is nicely melted.

Garnish: Once baked, remove the tart from the oven and let it cool for a couple of minutes. Top with fresh basil leaves for an aromatic touch.

Serve: Cut the tart into slices and serve warm or at room temperature as an appetizer or light meal.
